cooking fear #2: homemade pie crust.  i once thought homemade pie crust would turn making a pie into a day-long affair.  however, using ina garten’s perfect pie crust recipe, i managed to turn these:

into this:

in just a few hours (including baking time).  turns out that making your own crust really is worth it.

now that i finally have some time on my hands, i have been cooking up a storm.  i decided that this is the summer i get over my cooking fears.

fear #1: homemade tortillas.  i used this recipe, and it ended much easier than i anticipated.  they ended up slightly misshapen (rolling out dough is not one of my skills) but still delicious.

i added corn, avocado, fresh pico, and black beans for a delicious dinner.

when you are having a crazy week, you need a little pick me up to start the day off right.  mine comes in the form of an english muffin, homemade jam, and fresh blueberries.

after trying this recipe for buttermilk english muffins, i will never buy them from the store again.

add in homemade strawberry jam and fresh coffee, and i am a happy camper.

breakfast really is the best meal of the day.

whipped these up this weekend.  rested the dough for 24 hours instead of 30 minutes (as stated in the recipe).  totally worth the wait.

brought some beautiful peas and asparagus home from the market.  used them to make this risotto. topped with fresh shaved parmesan.
